I recently visited Toronto and made these two videos with my friends Nikky of HealthNut Nutrition and Davida of The Healthy Maven I love them both and you will two. Each of these videos discusses very different but equally important topics so I thought I’d share them both along with some resources that have tremendously helped me with each of the two topics discussed.

1. START BEFORE YOU’RE READY::

This video is about ending procrastination & starting your creative passion. We discuss how to beat procrastination and do what you love regardless of your skill level or resources when you first start because stating is the hardest part.

This video is equally as important but on a completely different topic. Here we discuss our unique patterns with food and body image. We discuss the challenge of finding balance between our passion for sharing about healthy living  with  finding pleasure in eating and not being too restrictive about our choices.

NEW February Gratitudes // aka Favorites VIDEO

What’s up guys? I’m obsessed with watching YouTube. So I’m psyched that I’m getting back into making videos consistently including last week’s & now this week I’m starting something new.  I will be making a monthly favorites videos where I will basically share what’s inspiring me and what I’m loving lately with you. Instead of calling it a favorites video like most YouTubers call them, I’m going to call them Monthly Gratitudes instead because that’s what it really is. The practice of making these videos monthly is just as much for me as it is for you. Creating it each month will allow me to examine all the good things I have and feel gratitude for them when I share.

Foodie Friday | Recipe Wonderland Homemade Marshmallows

So I’m kinda obsessed with homemade marshmallows. The process, the benefits, the taste, the things they do for my hot coco… I just love em!  Here’s the deal, I never ever, ever thought I would eat (much less cook with) gelatin ever! As a strict vegan, I avoided it for years. Until, that is, its health benefits were made aware to me. I reluctantly tried gelatin as a supplement to heal leaky gut and found its gut and skin healing properties amazing and have incorporated grass-fed organic Great Lakes gelatin into my diet. Gelatin is a dietary supplement for joints since it’s so high in collagen, making it also amazing for your skin as well as healing to the gut-lining. If you (like me) struggle with digestion discomfort this could be a real lifesaver.  Read more about the benefits of gelatin here,  but to name a few: hair and nail growth, joint recovery, skin clearing & tightening, and digestion improving since it naturally binds to water and helps food move more easily though the digestive track.

Gelatin solo doesn’t taste so great and marshmallows are really the best (& most fun) way to eat it!

Ingredients:

  • 2  cups water
  • 1.5 tsp liquid stevia
  • 6 tablespoons gelatin (grass-fed based)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon vanilla bean
  • 1/2 teaspoon cinnamon
  • Coconut oil or parchment paper to line the pan so they don’t stick
  • Arrowroot Starch for dusting to make it look like traditional marshmallows (optional)
  • Optional: pure maple syrup or Yacon Syrup (super good to add a teaspoon or two of these)

Place the 6 tbsp gelatin into the bowl with a cup water. Mix together. Let sit for a few minutes.

Meanwhile, in a small saucepan , heat up 1 cup water  until it is just about boiling.  (if using the Yacon or maple syrup add it and heat it in this water.)

Then grab your hand mixer & get your arm ready because you’re about to work it! (or if you have a standing mixer use that, this whole process would be much easier!) Slowly pour the hot water (or hot water & syrup mixture) down the side of the bowl into the gelatin mixture. Once you have added all of the water, add vanilla bean powder (cinnamon if using) and liquid stevia, and increase the speed to high. Beat for about 15 minutes and yell affirmations or listen to music (that’s what I do!)

While the mixture is whipping (if you have a standing mixer) or when you’re done mixing grab a pan and line it with either coconut oil or parchment paper. Dust the pan with Arrowroot starch – not required but it gives them a nice texture and makes them look so legit.

After your arm is score and the 10-15 minutes are up you’ll notice the mixture starts to have peaks – pour it into your pan (a spring form might be super great and easy!) and dust the top with arrowroot and could even dust with cinnamon or cocoa powder if you wanted.

Let them set for a few hours (overnight is best if you can be that patient). Then cut them into desired shapes using a sharp knife or cool cookie cutter! Store in an airtight container.

This recipe is big! I was making it for my family for christmas, so you could just cut it in half. They keep for at least a couple days.

** If you do not want to use gelatin – you can try agar agar – 3/4 tsp = 1 tsp

FOODIE FRIDAY | SICK? GETTING SICK? NO PROB I GOT YOU, DRINK THIS…

It’s that time of year. There’s lots of icky stuff going around, so heal or protect yourself whatever the case may be with this powerful yet healing tonic. This drink is super simple and will heal the flu or prevent you from getting it altogether! Or just have it everyday to warm up!

Also, something I’ve been doing to really boost my immunity and promote both liver and skin health is working in MSM (great for joint health as well as skin health, pull heavy metals out) and Camu Camu (super duper high in vitamin C which is amazing for skin health) everyday. Since they don’t taste the best I like to just take them as a shot, and I’ve been adding them to my liver cleansing shot of lemon and olive oil. I instagrammed it this week and people loved it. Here’s what you do:

-1/4 tsp MSM

-1/2 tsp camu camu

-1 tbsp olive oil

– half a lemon

-1 tbsp water

It will be strong so take as shot then follow with warm water with lemon or drink in the video above! Good luck! Bottoms up y’all!
