Dope Super Healthy Cauliflower Mash Video Recipe

Check out our Vimeo channel, where we just posted the latest edition of Hot & Healthy, a column/recipe we do for The Big Green.  Hot & Healthy includes a monthly recipe video for the Sex & Health section where we share a healthy (usually vegan) and somewhat simple recipe. In November we made mac & cheese, of the vegan and gluten-free variety.  Since vegan and gluten-free are typically never associated with either mac or cheese, we thought it would be interesting to make a cheese-less, pasta-less version with spaghetti squash and homemade cashew cheese.  I swear it tasted better than it sounds! However, it did have a rather extensive ingredient list and we made it while we were famished, almost killing each other in the process. We swore next month would be easier and have fewer ingredients.

So in December, we cut our recipe list in half and made this extremely simple holiday breakfast bake. It was a busy time of year for everyone and we were busy with finals/holiday preparation, so this recipe was perfect! My family even made a version of it for Christmas morning brunch.

Then, for January, I discovered (and am now obsessed with) celebrity nutritionist Kimberly Snyder, and we made an even simpler recipe, her Raw Cauliflower ‘Mashed Potatoes.’  We adapted it from her recipe, and it is my favorite thing we’ve ever created! I could literally eat it for every meal, every day (and we’ve made it so many times I almost have).  I was never a huge fan of regularly mashed potatoes, usually passing them by in the holiday buffet lines, but I would fill my plate with this recipe and go back for seconds. It is completely raw, can be made in minutes, and even has the stamp of approval from nutritionist and author Kimberly Snyder (who I love and will do a post on soon, her book is amazing!).
