Foodie Friday | PB & J Breakfast Tacos Recipe

Happy 4th of July! Today’s recipe is somewhat patriotic looking with the red & blue berries and if you add some coconut flakes we’ve got the entire US of A  color scheme accounted for. The other day I had nothing in the fridge and didn’t think this week was worth grocery shopping since I’d being going home for the holiday. I woke up starving for breakfast and wanted to eat rather than drink my smoothie so I took my smoothie ingredients and made these tacos instead. This is so simple, refreshing, and light. It requires no equipment and very few ingredients.

Ingredients:
-Romain Leaves or Collard Greens 
-Berries (organic frozen of fresh) 
-Nut Butter of Choice (May Favorites are Pumpkin Seed or Hemp Seed) 
-Optional Add-ins: coconut flakes, sea salt, cinnamon etc.

Foodie Friday | Raw Thai Wraps & Kale Chips

My colorful Thai Pate Wraps are a part of my first Ebook “Un”Cookbook that was recently launched. Imagine a sweet Pad Thai sauce mixed with almonds, crunchy jicama, carrots, and sprouts, rolled up in a gluten free collard leaf wrap. This is the perfect meal to take on-the-go as it is portable for your lunchbox and stores well in your fridge for a couple of days. The almonds give you a good source of protein and healthy fat, giving you sustainable fuel to keep up with your ambitious schedule!

Thai Pate Wraps

Tools Needed: Food Processor

Prep Time: 20-25 minutes

Makes: about 6-8 Collard Wraps

Pate:

1 ½ cups shredded carrot or finely chopped

½ cup almonds (soaked)

1 cup sunflower seeds (soaked)

4 Tablespoons raisins

½ Teaspoon coconut nectar (or other sweetener such as raw honey or maple syrup)

1 ½ Teaspoons Bragg’s Liquid Aminos or Coconut Aminos

3 Tablespoon ginger root, chopped

1 garlic cloves

½ lemon, squeezed (about 1-2 teaspoons)

For the filling:

1 jicama, peeled and julienned

2 large carrots, shredded

1 package of red clover sprouts, or sprouts of choice

1 bunch of collard leaves (note: pick out collards that are not ripped. It will make it easier to wrap)

*Wash collards & prep your veggies and place veggies in bowls around your work station. Lay out a cutting board to roll the collard wraps. Take a collard wrap and using a small knife, cut horizontally near the bottom of the leaf to cut off stem. You will see that the stem is pretty thick towards the end of your collard wrap. Using a small knife, vertically slice the top half of the thick collard stem. Make sure not to cut the leaf; you are only removing the top layer of the stem (this will make it easier to wrap.)

*Once you have removed part of the thick stem, now it is time to fill your wrap. Using a spoon or dull knife, spread the Thai Pate around the wrap. Spread most of the Thai Pate along the base of the wrap, horizontally. Spread the rest, (less thick) around the edges. Add your layer of shredded carrot, julienned jicama, and sprouts. Now wrap the collard up like a burrito, by pinching each side in first and rolling it over, continuing to pinch and tuck the sides in until you have create a stable wrap. Serve as is or cut in half.

Foodie Friday | Skin Healing Super-food, tastes like a snicker-doodle Smoothie!

Welcome to Foodie Friday! I hope you’ve been enjoying Skin Healing Week, here in wonderland. We kicked things off with this recipe for what I’m doing typically on my skin to heal it naturally, then on WWRadio we had natural skin healing guru of The Love Vitamin and today as promise I’m sharing a super food, skin healing tonic smoothie recipe.

I thought about this smoothie all week, researching and crafting the perfect combination of ingredients for glowing, healthy, vibrant skin. Who doesn’t want to drink their way to healthy skin? Especially when the smoothie tastes this good! It has so many healing ingredients in here that I honestly wasn’t sure how it would taste. However, as you’ll see in the video I was presently surprised that it not only was delicious but tasted like a snicker doodle.

I can’t wait for you to try it. Feel free to make it your own, if you don’t have all the ingredients I’m using here, work with what you do. All that  matters when you’re creating a premeditated tonic to heal something, is that you truly believe in  each ingredient, and you’re not just adding them because you heard or read they are healthy, but because you know their healing properties & they work for your unique body. For example, don’t eat kale because of the buzz & how nutrient packed it is eat kale because it makes you feel vibrant. For me, adding raw kale to my smoothies really does work anymore, it’s difficult to digest for my weak digestion and after adding it daily for years, I’m finally listening to my body and taking a break from it.

BOTTOM-LINE: give your body what it wants & what it needs to heal, nothing more nothing less and know it is different for every single body. A trendy super food may not be so super for you, so listen to that!

Ingredients: 1/2 cup raspberries (or berries of your choice)

1 apple

Greens of choice: I use a little celery & a cup of spinach

Wheatgrass

Fresh Aloe (insides)

Chia Seeds (about 2 tablespoons, allow to gel in liquid for about 15 minutes)

1/2 cup spring water

1/2 cup coconut water keifer (extra probiotics, but if you don’t have can just replace with more water)

1 tablespoon ground flaxseed

1/2 tablespoon MSM powder

1 tablespoon Green powder I used Green Vibrance

1/2 teaspoon raw wildcrafted vanilla bean powder

2 whole fresh figs (or sweetener of your choice perhaps raw honey or green stevia)

Cinnamon to taste

Method: Blend, dance, enjoy, heal!

Best Juice Experience of my Life | DROUGHT at the Detroit Shinola Storefront

Yes the juice was grand, but paled in comparison to the conversation. This week I visited a real local gem, the DROUGHT storefront at the beautiful Shinola Flagship store. Not only do you walk in and immediately want everything in there (from this rad bike to this iPad case to the juice), but the warm inviting atmosphere and cool people make you want to stay for hours.

I don’t talk enough in WWonderland about all the positive local strides toward wellness and the DROUGHT sisters are right at the lead of that. Their passion is magnetizing and they are clearly living their purpose.

Ever since their event where they brought Joe Cross from Fat, Sick, and Nearly Dead in to DetroitDROUGHT has been on my radar and finally getting to try a juice exceeded my expectations. As Joe said in his lecture (one of my favorite take-aways) with every dollar you spend on food you are casting a vote. That’s why I’m happy to spend $10 on a raw juice I know is organic, cold-pressed, full of enzymes, and love, all in a well-designed glass bottle. And better yet I’m supporting a cool local family business that I know will never compromise their product for anything because of the effort and passion they have for their mission. As for the juice: I asked Jessie, one of the DROUGHT sisters, what her favorite juice was and decided I would get that. Without hesitation she recommended Apple, Ginger, Lemon juice with a shot of E3Live mixed in. While I usually go for the greens, I’m so glad I tried this. You get all the great minerals from the E3Live and all the intense flavor of the raw juice. It was the most refreshing thirst-quenching thing I’ve ever tasted and gave me instant energy on a hot day.
